From Food Festivals to Food Sensitivities: Our Journey

Before we owned a food service business or had a family, we traveled all over the country chasing food adventures. If a restaurant was featured on Man vs. Food or Diners, Drive-Ins, and Divesโ€”we were there. We โค๏ธ food! And not just restaurantsโ€”we hit up Bacon Festivals in Albuquerque, Tacolandia in Dallas, Donuts & Midnights in Austin, and so much more.

Life in our 20s was goodโ€ฆ until it wasnโ€™t.

I began experiencing serious gut discomfort and unusually high estrogen levelsโ€”even though I was a fit male working out 5โ€“6 times a week and taking high-quality supplements. It didnโ€™t make sense.

So I turned to health professionals. After extensive lab testing and a session with a dietitian, I was encouraged to try 30-, 60-, and 90-day elimination diets. The list of foods to avoid was long, but with my wifeโ€™s support, we decided to take on the challenge.

The results shocked me. My energy returned, my gut health improved, and overall, I felt like a new person. Over time, I did reintroduce eggs and red meat, but I became extremely picky about qualityโ€”choosing pasture-raised meats and avoiding low-quality ingredients that can contribute to long-term health issues.

That journey taught me that what we eat really mattersโ€”and itโ€™s why Iโ€™m so passionate today about helping families find allergy-friendly, high-quality meals that bring health and joy back to the table.
